			<content:encoded><![CDATA[<p>Our chef Claude Laprise and his kitchen team, invites you to discover a whole new piece of beef which is very tasty.</p>
<p>What is the scoter? This is a new cutting taken inside of the shoulder, this piece of meat if I may say so, is the side-netting of the shoulder. Californians who have made ​​known this piece of meat to taste that blends between the flap and liver. The scoter uses medium rare and the rest of the meat after cooking is very important.</p>
<p>The scoter can be used with any type of sauce it is inspired by the classical time. It is also excellent marinated. We invite you to discover the dish quite unique in our Bistro or in our dining room.</p>
