What is the scoter? This is a new cutting taken inside of the shoulder, this piece of meat if I may say so, is the side-netting of the shoulder. Californians who have made ​​known this piece of meat to taste that blends between the flap and liver. The scoter uses medium rare and the rest of the meat after cooking is very important.
